Our Beef



Passion. Knowledge. Craftsmanship.
 
As with all good natural foods our beef is the result of a constant pursuit of perfection.
 
All our primals are selected from traditional Irish breeds naturally reared on recognised farms throughout Ireland. Our cattle and lamb graze on lush green grassland for the majority of the year.
 
After selecting the finest raw material possible we carefully nurture the beef, beginning with a resting period for up to 28 days. it is the ageing process that we have spent years perfecting.
 
The meat is hung in a climate and humidity controlled room where the length of maturation is determined by the experience and knowledge of our expert dry agers.
