Minister Celebrates Food Awards!
On the Queen’s first official visit to the Republic of Ireland a historic state banquet was held in her honour by Irish President Mary Mc Aleese and was attended by ministers from the North and south of Ireland, David Cameron, celebrities, sport stars, musicians and Politian’s alike. As they all descended into Dublin Castle to its beautiful surroundings and top class company, executive chef Ross Lewis was ensuring the quality and presentation of the food was ‘fit for a queen’, and it didn’t disappoint.
The Starter
Cured salmon with Burren smoked salmon cream and lemon balm jelly
The Main course
Supplied by none other than Kettyle Irish Foods and contained
Rib of Slaney Valley Beef, ox cheek and tongue,
smoked champ potato and fried spring cabbage,
new season broad beans and carrots with pickled and wild garlic leaf
The Dessert
Carrageen cream with strawberries, fresh yoghurt mousse and soda bread sugar biscuits, Irish apple balsamic vinegar meringue.
Maurice Kettyle of Kettyle Foods said “We were thrilled to be invited to supply our successful dry-aged beef to such an important and historic event. We took responsibility for selecting the animals, supervising the processing of the meat at the plant in Slaney and then brought it to our Lisnaskea factory for our unique maturing process.”.
