What is the Process of Dry aging?

Kettyle Irish foods have the only purpose built dry aging facility in Europe.

Upon receipt the raw material must be brought under control as quickly as possible. We determine this by the meat forming a more robust layer around the primal's so the inner edible meat is cocooned and is now safe to mature naturally at its own speed.
